Asian Ground Meat Lettuce Wraps

This is one of my favorite easy, weeknight dinners that packs lots of raw veggies. Use your choice of ground meat, I like pork best, or swap out the ground meat for my easy pulled chicken breast for a different take.

Pair this with my peanut dressing/sauce, saving leftovers for salad (but I doubt there will be leftovers because I would drink this sauce lol)



This makes about 2 servings.


Ingredients:

  • 1 tablespoon avocado oil

  • 1/2 pound ground meat

  • 1/2 cup chopped white onion

  • 1/4 cup carrot, chopped

  • 1 tablespoon ginger, minced

  • 3 cloves garlic, crushed

  • 1/4 cup coconut aminos

  • 1 teaspoon sesame oil (optional)

  • Bibb lettuce for wrapping

  • Toppings: Sliced cucumber, shredded carrots, cashews or peanuts (try bamboo shoots for a nut-free option) and peanut sauce


  1. Heat a large non-stick skillet over medium heat, add avocado oil and carrots and onions. Cook for 2 minutes, or until the onion is translucent.

  2. Add ginger and garlic, sautéing for 1 minute before adding in ground meat.

  3. Break up the meat well with a spatula or wooden spoon, allowing the meat to cook through and brown.

  4. Add coconut aminos and sesame oil, mix well and remove from heat.

  5. Wrap in lettuce, topping with slices of cucumber, cashews or peanuts, and peanut sauce. Enjoy!
