With all this news buzz lately, a refreshing smoothie to boost your immune system through healthy, nutrient rich foods seemed just right. It also serves as an excellent brain food smoothie- so 2 birds, 1 stone. Some of the ingredients might seem a little unusual but blended together, I promise its delicious (tested and true)! Highlights of what you'll find in this power drink....
Blueberries- rich in anthocyanins, a flavonoid that acts as a powerful antioxidant to protect our cells, improve neural function and boost the immune system
Ginger- studies have shown ginger to be both antiviral and antibacterial, contains antioxidants that protect our cells
Kale- high in vitamin A, vitamin C and folate
Parsley- contains vitamin C and other immune boosting anti-oxidants, like glutathione
Chaga- an adaptogenic mushroom that improves immune response and reduces inflammation
MCT oil- antimicrobial, may help immune system fight against viruses, bacteria, and fungi
Avocado- good source of healthy fats along with vitamin C, vitamin K and folate
Ingredients:
1 1/2 cups unsweetened almond milk
1/4 cup blueberries
1 mini cucumber (or 1/4 cup cucumber)
1 tablespoon (about 1 inch) fresh ginger root- peeled and chopped
1 cup frozen kale
1/4 cup loosely packed flat leaf parsley
1 tablespoon chia seeds
1 teaspoon MCT oil
1/4 avocado
1 scoop vanilla collagen protein (I use and love Ancient Nutrition Vanilla Multi Collagen)
1 packet Four Sigmatic Chaga mushroom powder
Blend all of the ingredients above in a high speed blender until smooth. Tip: freeze your blueberries, cucumber, and avocado in advance for a thicker and more icy smoothie texture. Enjoy!
