This stuff is good enough to drink straight. But it is also delicious over some Asian Ground Meat Lettuce Wraps (see previous post!) Not sure if tahini would work as a nut-free option, but it's an idea! This is enough for 1 serving, I recommend doubling if you want leftovers. If it's too thick, thin it down with some coconut milk (water works too but can dull the flavor).
Ingredients:
1/2 cup peanut butter (no added oils or sugar)
1 tablespoon coconut aminos
2 tablespoons lemon juice
2 tablespoons rice vinegar
1/4 cup cherry tomatoes
2 tablespoons loosely packed cilantro
1 teaspoon chopped jalapeño (optional for spice)
Place all the ingredients in a food processor, blender, or Nutri-bullet and blend until smooth. Thin down with coconut milk or water until it is the desired consistency.
