DIY Vinaigrette Base- Super Easy & Versatile

This is where my kitchen journey began. I've been in charge of making salad dressing since I was about 8 years old. Luckily, I learned this easy 3 ingredient base to play with at a young age and it's been adjusted and tweaked to dress up various salads, even marinade chicken, or most recently – pour on roasted asparagus (it was delicious).



It takes 3 ingredients, not including herbs, salt and pepper to taste, and then you can get creative with the rest. I like adding raw garlic (it's a little spicy!) for flavor and health benefits. Or shallot for a milder taste. Just playing with the vinegar or mustard you use can change the taste completely. Have fun getting creative!


Ingredients:

  • 1/4 cup tablespoons olive oil

  • 2 1/2 tablespoon vinegar of choice

  • 2 teaspoons mustard (I LOVE Sir Kensington's spicy brown)

  • herbs, salt & pepper to taste – try dill, basil, parsley, rosemary, shallots or garlic


  1. Whisk the oil and mustard together until mixed well. The mustard acts as an emulsifier so when you add the vinegar, it mixes in smoothly. Season with salt, pepper, herbs and garlic or shallot if using.

  2. Whisk in your vinegar – taste it and adjust as needed! This is so important. I don't write recipes for you to follow to a tee, we all have different tastes and use different ingredients. Taste it- if it feels too oily, add some vinegar. If it is too sharp and acidic, add some oil. If the mustard is too strong, add oil and vinegar. Little bits at a time, taste and re-taste until it suits your taste buds. Same goes with salt and pepper or other herbs. Start small, you can always add more but you can't hit undo as easily!
