Fab4 Inspired Soup

Inspired by the amazing Kelly Leveque, I took the concept of #Fab4smoothies and applied it to my Mom's easy spinach soup recipe. The result? An easy, blendable meal that's filling, savory and warm for winter day's where time is short and a smoothie might not be your vibe. You get lots of healthy greens- kale, spinach, chard, healthy fats, collagen protein from bone broth, and it's super tasty too! Note: To make things even easier, you can use frozen greens to cut back on chopping/washing time. This makes about 2-4 servings depending on whether you use it as a snack/app or a full meal.


Before you start, tools you'll need-

A cutting board & knife, or even easier- a garlic crusher, a saucepan, a blender that ideally can tolerate heat, if not, let your greens cool before blending!

Ingredients:

  • 4 cloves of garlic- crushed or chopped- do this first!! Crushing or chopping garlic is necessary to produce allicin, the compound that makes garlic beneficial to our health (anti-inflammatory, antioxidant). It takes time for the enzyme allinase to work to form allicin, so you want to give it time (5+ min) to sit before you expose the garlic to heat!

  • 1/2 tbsp coconut or avocado oil

  • 4 cups high quality bone broth- I like bonafide frontier blend or brodo hearth for the most flavor

  • 1 1/2 - 2 cups spinach

  • 1 cup swiss chard

  • 1 cup kale (if you're missing any of the greens listed, feel free to get creative and just aim for 3-4 cups of greens total)

  • 1/2 cup parsley

  • 1-3 tbsp MCT oil (if you're not used to using this, go easy- it can take some getting used to and upset your stomach if you're new to it, you can sub more coconut oil or even add avocado for a different healthy fat)

  • Hemp hearts for topping- I like using Manitoba Harvest garlic & onion hemp hearts for extra flavor

1- Sauté your garlic over medium heat in 1/2 tbsp coconut oil or avocado oil until golden, then add all greens (spinach, chard, kale and parsley) and sauté until thawed if frozen or softened if fresh.

2- Add greens & garlic, bone broth, MCT oil to blender- blend until smooth

3- Pour back into saucepan and cook until heated through- top with hemp hearts and enjoy!
